Renovation of the Médéric hotel school building in an Art Deco spirit

Located at 20 Rue Médéric in Paris's 17th arrondissement, the hotel school is owned by the Professional Association of Hoteliers, Restaurateurs and Café Owners and is home to CFA Médéric, a vocational training centre dedicated to the hospitality and catering professions. Wilmotte & Associés has been commissioned to renovate this landmark 1930s building, whose ocean-liner-inspired façade is listed as part of the City of Paris's architectural heritage. The project aims to create a campus that meets contemporary international standards while preserving its distinctive Art Deco character.

The monumental red-brick building, with its recessed mortar joints and characteristic 1930s architectural language, is composed of two L-shaped wings—one rising to one upper floor and the other to five upper floors —arranged around a central courtyard. The complex rests on a base comprising the Ground Floor and Basement Level 1, punctuated by a large central void that brings abundant daylight and zenithal light into the lower level.

Teaching facilities, administrative offices and student amenities are distributed throughout the building. These include classrooms, a 118-seat lecture theatre, the executive offices, administrative departments and meeting rooms.

A 17-room four-star training hotel occupies the fourth floor. At the top of the building, the fifth floor features a fine-dining training restaurant, its professional kitchen and a bar opening onto a landscaped rooftop terrace accessible to the public, offering panoramic views across Paris.

Below ground, Basement Level 1 accommodates a range of practical training workshops flooded with natural light through large glazed openings that enhance transparency and visual connections throughout the spaces. Basement Level 2 houses technical rooms and storage areas, while Basement Level 3 retains the existing 40-space car park.

The renovation carefully restores and enhances the building’s heritage features, including its Art Deco façade, the wrought-iron entrance gate designed by Raymond Subes, curved staircases housed within towers topped by sweeping glazed roofs, the auditorium and the grand restaurant hall inspired by the dining rooms of transatlantic ocean liners.

Developed with sustainability at its core, the project gives significant importance to landscape design in order to mitigate the urban heat island effect. The accessible roofs are fully planted, while the roof slabs over the Ground Floor and First Floor, together with the large void overlooking Basement Level 1, accommodate a lush multi-level garden featuring generous planted beds accessible to students.

By combining heritage enhancement, respect for the school’s history, contemporary performance standards and high-quality user experience, this next-generation campus is designed to become an international benchmark for excellence in the transmission of French hospitality and culinary expertise.
